Delicious with a stew of veal shank or other delicate white meats. Its fresh, fruity character pairs beautifully with Asian dishes like Thai beef salad and is an excellent alternative to white wine with spicy red and green curries. Be sure to try it with pears in red wine as well.

Semi-continental climate with Mediterranean influence. A spring with regular rainfall, a long, warm, sunny summer, a mild autumn, and a fairly cold winter. Early spring can still bring frosts. Heavy rain and hailstorms can also occur.

A selected parcel of the vineyard "Les Charmes" (the family vineyard in Morgon). Weathered rocky soil containing granite, clay, and iron oxide.

Manual harvest with strict selection. The grapes are fully destemmed. Maceration lasts 17 days. Fermentation and aging occur without the addition of sulfites in concrete vats. The wine then matures for another 10 months or so.
