Bright, clear light yellow color with wonderfully fine bubbles. Fresh, delicate nose with impressions of white and yellow stone fruits typical of Chenin. Dry, lively start with a finesse that many Champagnes would envy. Refined hints of fruit and blossom are complemented by a tight and dry mouthfeel. Excellent as an aperitif!

Flavorful and dry aperitif. Delicious with various tapas, oysters, or other shellfish.

Mild continental climate with maritime influences. Crisp, relatively dry winters and warm, relatively dry summers.

Soil of sand and loam. No use of chemical pesticides. Limited yield to increase concentration.

vinification

100% Chenin Blanc. Manual harvest. Cold fermentation in temperature-controlled stainless steel vats. Then undergoes second fermentation (prise de mousse) in the bottle. Aged on lees for 60 months before disgorging. Brut dosage.
